Salads
1/4 cup tarragon vinegar
1/4 teaspoon Dijon mustard
1 teaspoon sugar
1/2 teaspoon dried tarragon
1/3 cup veg oil
Salt & black pepper
4 cups mixed greens such as romaine, Bibb, or Boston lettuce
1 cup thinly sliced celery
2 whole green onions finely chopped
11-oz can mandarin segments drained
3 tablespoons toasted slivered almonds
In small bowl, whisk vinegar with Dijon, sugar, and tarragon. Then, whisk in oil. Add salt and pepper to taste.
Just before serving salad, break lettuce into bite-size pieces.
Combine with green onions, almonds, celery, and mandarin orange segments.
Pour dressing over when ready to serve.
